Recipe: Sweet Potatoes di DeSantis

Joe’s favorite Thanksgiving Recipes

I am Joe DeSantis, chief strategy officer at Gingrich 360. The following sweet potato recipe is a constant presence at holiday meals in my family. I got it from my mom, who got it from her older sister. It is one of my favorites and always gets compliments when I bring it over to friends’ — or they visit for the holidays.

You can make this the day before and then cover and refrigerate for reheating and browning of the marshmallows — or bake it right before dinner.

Sweet Potatoes di DeSantis


  • 3 cups boiled (in their skins) mashed sweet potatoes (about 6 medium potatoes)
  • 1/2 cup sugar
  • 1 tsp. Cinnamon
  • 1 tsp. Vanilla
  • 2 eggs, beaten
  • 1/2 cup margarine or butter

After boiling the sweet potatoes, remove the skins and mash the potatoes. Mash out all lumps.

Add the rest of the ingredients and beat well. Put in a buttered 3-qt. casserole dish.

Bake 30 minutes at 350 degrees, uncovered

Optional: Add marshmallows to the top and brown for 3-5 minutes (If reheating, cover with foil and cook at 350 for about 20 minutes. Then uncover and add marshmallows and brown.)
